Meet the RD

Hi! My name is Caroline Nelson, and I am the Registered Dietitian for Carolina Dining Services (CDS). I am so excited to be a part of the CDS team!
I earned my bachelor’s degree in nutrition and French at Baylor University in Waco, Texas. I moved to North Carolina to complete my dietetic internship at Meredith College in Raleigh, NC. Then, I graduated from the Gillings School of Global Public Health at UNC with a master’s in public health, focusing on nutrition and global public health.
Prior to joining the CDS team, I was a Project Manager and Dietitian at the Health Promotion and Disease Prevention branch at UNC Chapel Hill. I had the opportunity to work on several projects, focusing on the Mediterranean diet, cognitive health, and intermittent fasting. My education and research background will allow me to continue an evidence-based nutrition and wellness approach with CDS.
When I’m not focusing on nutrition, I enjoy spending time with my husband, our three pets, playing kickball, traveling, and gardening.
