On this year’s “Talk Like a Pirate” day, Carolina Dining will be participating in the Emergency Preparedness Festival hosted by the office of Emergency Management & Planning. This year’s theme will be Pirates. The event serves as an engaging way to share emergency preparedness information from campus safety stakeholders but also from Town, County, and State safety partners. CDS will be doing a demo on “how to cook gourmet with your emergency food supply.” Keeping an emergency food supply is an important aspect of emergency preparedness but just because you are trying to survive doesn’t mean you can’t dine in style. We will show you how to make Scallywag Stew!

Scallywag Stew Recipe:

Ingredients

1 Cup – Onion – Medium Dice

1 Cup – Green Peppers – Medium Diced

1 clove – Garlic minced

1 Tablespoon – Jalapeno Peppers – you may more if you like

1 Tablespoon – Vegetable Oil

1 teaspoon – Dried Thyme

1 teaspoon – Ground Allspice

1 teaspoon – Ground Ginger

1 can – Black Beans – drained and rinsed

1 can – Lentils – drained and rinsed

1 can – Diced Tomatoes – not drained

1 Cup – Coconut Milk

¼ Cup – Brown Sugar

¼ Cup – Raisins

2 teaspoons – Lime Juice – this will help prevent scurvy.

Salt and Pepper

 

Directions

In a saucepan over medium heat add vegetable oil, onions, and peppers. Cook and stir until almost tender and add the garlic, jalapeno pepper, thyme, and all spice. Cook about 2 minutes (until spices become fragrant).

Add the black beans, lentils, diced tomatoes (with their juice), coconut milk, brown sugar and raisins. Cook until heated through and bubbly. Add lime juice and season to taste with salt and pepper.
